Beer Braised Zucchini

Quick and easy, this beer braised zucchini side dish is also vegan!

· 1 1/2 lbs. zucchini (about 2 large), sliced on a bias 1/2-3/4" thick

· 2 tsp oil

· a pinch of salt, or more to taste

· 1/4 cup beer, an amber ale is a great choice


1. Heat a large cast iron or non-stick skillet over medium heat.

2. Add the oil when hot, then the zucchini and a pinch of salt. Pan fry for 7-10 minutes, stirring occasionally, until golden and browned.

3. Add the beer, and cook until reduced, around 2-3 minutes, stirring occasionally.

4. Taste and adjust salt if necessary.
