The entire family will love these sweet & crispy funnel cakes -- a fan favorite from Royal Caribbean’s private island, CocoCay. Top with powdered sugar, or try something new and top with your favorite fruit, ice cream, caramel, hazelnut spread, or whipped cream (or better yet, all of the above).
Funnel Cake 8 oz Funnel Cake Mix 2 cups all-purpose flour 1 tbsp baking powder 1 tbsp granulated sugar ½ tsp salt 2 oz. all-purpose flour 1 oz. Powdered sugar 1 egg 1 tbsp vanilla extract 8 fl oz. cold water Vegetable oil |
DIRECTIONS: To make funnel cake mix, combine flour, baking powder, granulated sugar and salt.
Then add 2 oz. all-purpose flour and 1 oz powdered sugar and mix together.
Add egg, vanilla extract, cold water and mix well
Preheat vegetable oil in frying pan to 375 degrees F
Pour batter into a piping bag and cut the tip or use a kitchen funnel pourer
Pipe the batter into the oil in roughly a circular motion until a filled in circle is created
Fry both sides of the funnel cake until golden brown
Remove from oil and drain for 10 seconds or place on a paper towel
Dust with powdered sugar or serve with sugar, berries and whipped cream
