Royal Caribbean’s Coconut Ranger Cookies

Chewy with a bit of crunch, these coconut cookies are a delicious snack!

·        5 cups (600 grams) all-purpose flour

·        ½ teaspoon baking soda

·        2.2 cups (500 grams) unsalted butter, softened

·        2.5 cups (500 grams) brown sugar

·        1.3 cup (80 grams) dried coconut, shredded

·        6.5 tablespoons (100 ml.) coconut milk

·        6 eggs

·        1 teaspoon vanilla extract


1.        Preheat oven to 350°F (176°C).

2.        In a bowl, sift together the flour and baking soda.

3.        In another bowl, beat butter with brown sugar until smooth.

4.        Beat in eggs one by one until well blended.

5.        Mix in the coconut milk and vanilla extract.

6.        Fold in the dry mixture of flour and baking soda, then add the dried coconut until evenly distributed throughout the batter.

7.        Using an ice cream scoop or 1/4-cup measure, scoop cookie dough onto a baking sheet and mold it into a circular shape.

8.     Bake until slightly puffed but barely colored, 9-12 minutes.
