A twist on a takeout classic will leave you full and your wallet happy.
Ingredients: Meatballs · Cooking spray · 1 lb. ground chicken · 1/3 c. chopped scallions, plus more for garnish · 1 large egg, beaten · 1/4 c. plain breadcrumbs · 1 1/2 tsp. garlic, finely chopped · 2 tsp. toasted sesame oil · 1 tbsp. low-sodium soy sauce · Freshly ground black pepper Sauce: · 2 tsp. cornstarch · 1/4 c. chicken stock · 2 tbsp. low-sodium soy sauce · 1 1/2 tsp. garlic, chopped · 1 1/2 tsp. ginger, chopped · 1 tbsp. unseasoned rice vinegar · 1/4 c. pure honey · 1 tsp. toasted sesame oil For serving: - Cooked Rice - Toasted sesame seeds, for garnish |
Instructions:
Preheat oven to 400°F. Lightly coat a sheet pan with cooking spray. Combine chicken, scallions, egg, breadcrumbs, garlic, sesame oil, and soy sauce in a bowl. Season with pepper. Form the mixture into 10 meatballs and place on prepared pan. Lightly grease meatballs with cooking spray. Bake until cooked through, 18 to 20 minutes.
Make sauce: Whisk together cornstarch and 2 teaspoons water in a large saucepan. Whisk in stock, honey, soy sauce, garlic, ginger, vinegar, honey, and sesame oil. Cook over medium-low heat, whisking, until mixture bubbles and begins to thicken, 1 to 2 minutes. Remove from heat. Add meatballs and toss to coat. Serve over rice, garnished with scallions and sesame seeds.
