Shaved Fennel Citrus Salad with Orange Vinaigrette

Ingredients:

·       1 large fennel bulb

·       2 large navel oranges

·       ¼ cup olive oil

·       ½ teaspoon fine sea salt

·       ¼ teaspoon black pepper

·       fennel fronds (to garnish)

Instructions:

1.     Shave the fennel bulb thinly with a mandolin or very sharp knife.

2.     Peel one of the oranges and cut the fruit into half-moon segments. Combine the fennel with the oranges in a serving bowl. 

3.     Zest and juice the other orange into a small bowl. Then add in the olive oil, salt and pepper and whisk vigorously until well-combined. 

4.     Pour the vinaigrette over the fennel and oranges and toss gently. Garnish with fennel fronds, more salt and pepper if desired and serve.
