Ikarian Lemon & Herb Roasted Potatoes

Vibrant lemon and savory herbs compliment these roasted potatoes for a delicious side dish.

(Serves 2)

·         4 small Yukon potato

·         2 cloves garlic

·         ½ tsp fresh mint

·         3 Tbs olive oil

·         2 ½ tsp water

·         2 ½ tsp lemon juice

·         ½ tsp salt

·         Black pepper to taste

·         ½ tsp dried oregano

·         1 Tbs + 2 tsp low-sodium vegetable stock/broth


1.      Preheat oven to 450°F and oil a large baking dish.

2.      Wash and chop the potatoes. Peel and dice the garlic. Wash and pat dry the mint, chop finely.

3.      In a large bowl, stir the potatoes, garlic, olive oil, broth, water, lemon juice, salt, and pepper together until the potatoes are evenly coated.

4.      Pour into baking dish. Roast in the preheated oven until potatoes start to brown, for about 15 minutes.

5.      Add oregano and mint to potatoes, stirring to combine. If potatoes look dry, pour another splash broth to dish.

6.      Return dish to oven and bake about 15 minutes longer or until the potatoes are golden brown.

7.      Adjust seasoning with salt and pepper, if needed.
